SABUDANA VADA
Ingredients:
- 1 cup of sabudana (tapioca pearls)
- 2 medium potatoes (boiled and mashed)
- 1/4 cup of roasted peanuts (roughly chopped)
- 2 green chilies (finely chopped)
- 1 tsp of cumin seeds
- fresh coriander leaves (chopped)
- salt (to taste)
- oil (for frying)
Instructions:
Soak the sabudana for 4-5 hours or overnight. Drain the water and allow them to dry slightly.
In a mixing bowl, combine the soaked sabudana, mashed potatoes, ground peanuts, green chilies, cumin seeds, coriander and salt. Shape the mixture into small vadas or patties.
Heat the oil in a pan and deep fry the vadas until golden brown and crispy. Serve hot with chutney or yogurt
