SALMON RICE
"In addition to being delicious, this recipe always brings back memories of my wife and that I adapted this recipe with the goal to please her and my daughter. Writing this short story, I realized that what I did is part of my daily routine of my job, too. We constantly have to seek customer satisfaction by developing solutions and providing customized services.", Maxuel says.
Ingredients:
700g of salmon (cut in slices)
600g of rice
1/2 of a red bell pepper
1/2 of a yellow bell pepper
1/2 of a green bell pepper
1 carrot
1 red onion
7 cm of a leek
2 tomatoes
1.7l of water
garlic
salt
black pepper
olive oil
butter
parsley and chives
Instructions:
Dice the bell peppers, carrot, onion and garlic and sauté them in a pan with some olive oil. Add 1.4l of water and let it simmer for 20 minutes.
Add 600g of uncooked rice to the pan. Leave it to simmer for 5 minutes whilst chopping the tomatoes and half of the leek. Add both to the pan.
In a second frying pan, grill the salmon strips with butter, salt, black pepper and olive oil. Once it’s cooked, add it to the rice pan along with some parsley and chives. Let it cook until the water is reduced. If needed, add the remaining water until the rice is cooked.
Serve it o a plate and garnish with the rest of the leek, some more parsley and black pepper. Enjoy!
