PASTA ALLA NORMA
Ingredients:
1 egg plant, cut into small cubes
8 dried tomatoes in oil
10 capers
20 to 25 Ligurian pitted olives
grated “parmigiano” or “pecorino” cheese
8 to 10 cherry tomatoes
some pieces of red onion
pasta of your choice
Instructions:
In a pan, fry the egg plant and red onion with some olive oil. Add the cherry tomatoes next and fry everything for another two minutes. Be careful not to overcook the vegetables.
Next step: cut the dried tomatoes in small pieces.
Boil the pasta until it is “al dente” (not overcooked!!).
Whilst the pasta is cooking, put the dried tomatoes, capers and Ligurian pitted olives in the pan to the other vegetables and fry for 1 minute.
Drain the pasta and add it to the pan. Cook everything together for one more minute mixing softly.
To garnish, sprinkle freshly grated pecorino or parmigiano on the pasta.
