FIT CAKE
Ingredients:
3 eggs
3 tbsp. of xylitol
1 tsp. of salt
75ml of coconut oil
50g of oat bran
50g of oat flour
1 tbsp. of yeast
1 chopped banana
1 tbsp. of chopped walnuts and more whole walnuts to decorate the cake
1 tbsp. of dried or dehydrated cranberries
cinnamon to sprinkle the baking pan
Instructions:
Beat the eggs in a bowl, add the xylitol, salt and coconut oil and mix everything together. Gradually add the oat bran and oat flour, mix well.
Let it sit for 15 minutes to hydrate the bran. Then add the yeast, chopped banana, chopped walnuts and cranberries, mix gently.
Grease a 10x21cm rectangular cake pan with coconut oil. Then sprinkle in some oat flour and cinnamon.
Transfer the cake batter into the greased pan and tap it a few times on the counter to level the cake batter. Place some whole walnuts on the surface of the cake batter to decorate it. Then bake at 180°C for 25 to 30 minutes or until golden brown.
Serve it with jam, butter, honey, cream cheese, or whatever you prefer
