CREMA CATALANA

Instructions:

Add milk, lemon peel and the cinnamon stick to a pot and bring to a boil. Meanwhile, separate the eggs and put the yolks in bowl. Add the sugar and mix, then gradually add the corn flour and continue mixing. 

When the milk is boiling, remove the lemon peel and the cinnamon stick. Let it cool down a bit before adding the milk to the egg mixture. Stir. 

Put everything back into the pot and gently bring to a boil whilst stirring. Once the mixture has thickened, pour it into small dessert dishes and let it cool down. 

Before serving, add sugar on top and carefully roast it.
